Mardi Gras Bread

Ingredients
- 1 1/4 cups Cooking Oil
- 2 cups sugar
- 2 each eggs
- 2` cups carrots shredded
- 1 8 oz can pineapple crushed and undrained
- 3 cups Flour
- 1 tsp baking soda
- 3 tsp cinnamon
- 1 tsp Salt
- 1 tsp vanilla
- 1 cup chopped nuts pecan or walnut
Servings: loaves
Instructions
- Beat oil , sugar,and eggs well. Add in carrots and pineapple and mix well. Sift dry ingredients and add to other mixture and then add vanilla and nuts , again mix well.
- Grease and flour 2 loaf pans, divide batter an bake 350 degrees at 350 degrees for 1 hour or until a tester comes out clean
Serve with Honey Butter
- Mix the butter and honey together well and serve with the bread.
