Apple Chunk Cake

This is an old fashioned comfort cake topped with a brown sugar sauce. Top it off with a bit of whipped cream.
Ingredients
- 1/2 cup Butter softened
- 2 cups sugar
- 1/2 tsp vanilla extract
- 2 ea eggs
- 2 cups all purpose flour
- 1 1/2 tsp Ground Cinnamon
- 1 tsp ground nutmeg
- 1/2 TSP Salt
- 1/2 tsp baking soda
- 6 cups tart apples chopped and peeled
Butterscotch Sauce
- 1/2 cup brown sugar packed
- 1/4 cup Butter cubed
- 1/2 cup heavy whipping cream

Instructions
- In a large bowl, cream the butter, sugar and vanilla. Add eggs one at a time beating well after each addition. Combine the flour, cinnamon, nutmeg salt and baking soda; gradually add to the creamed mixture and mix well (note: the batter will be stiff) Stir in the apples until well combined
- Spread into a greased 9x13 in baking dish. Bake 350 degrees for 40 to 45 min or until top is lightly browned and springs back when lightly touched. Cool for 30 min before serving.
Butterscotch Sauce
- In a small saucepan, combine brown sugar and butter cook over medium heat until butter is melted. Gradually add cream. Bring to a slow boil over medium heat stirring constantly. Remove from heat and serve with the cake.
