Instructions
  1. In a large bowl, combine the cake mix, cream cheese, pudding mix, milk, eggs and cinnamon; beat on low speed for 30 seconds. Beat on medium for 2 minutes. Stir in carrots and 1/2 cup walnuts.
  2. Pour into 3 greased and floured 8 inch round baking pans.
  3. Bake 350 degrees for 25 to 30 min or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.
  4. Spread frosting between layers and over top and sides of cake. Sprinkle top with remaining walnuts. Store in refrigerator.
