Speedy Chicken Noodle Soup

Ingredients
- 2 cups water
- 1 32 ounce chicken broth
- 1 tablespoon olive oil
- 1/2 cup onion prechopped
- 1/2 cup celery prechopped
- 1/2 tsp Salt
- 1/2 tsp black pepper feshly ground
- 1`` medium carrot chopped
- 6 ounces pasta fusili or other
- 2 1/2 cups boneless chicken breast, rotisserie shredded
- 2 tablespoons flat leaf parsley chopped

Instructions
- Combine 2 cups water and chicken broth in a microwave-safe dish and microwave ot HIGH for 5 minutes
- While broth mixture heats, heat a large saucepan over medium-high heat. Add oil to pan , swirl to coat. Add onion, celery, salt, pepper and carrot and sauté for 3 minutes or until almost tender, stirring frequently.
- Add the hot broth mixture and the pasta and bring to a boil. Cook for 7 minutes or until pasta is almost al dente.
- Stir in chicken and coo 1 more minute or until thoroughly heated. Stir in parsley. Enjoy.
