Sweet Potato Apple Tart

A great meal with a Mixed green salad on the side.
Ingredients
- 1 ea refrigerated rolled pie crust
- 2 small sweet potatoes peeled, finely sliced
- 1 onion medium thinly sliced
- 1 ea Gala Apple cored and thinly sliced
- !/4 cup sage leaves thinly sliced
- 2 tsp olive oil
- 1 medium potato Yukon Gold, thinly sliced
- 4 oz Asagio Cheese grated
- 1/2 tsp Salt and Pepper divided

Instructions
- Heat oven 425 degrees F
- Fit pie crust into the bottom and about 1 1/2 in up the sides of a greased 9 inch spring form pan
- Arrange half of the sweet potato in the bottom of the pan, place slices in a concentric circle. Top with half the onion, then half the apple. Sprinkle with half the sage, drizzle with 1 tsp oil and sprinkle with 1/4 tsp. ea. salt and pepper. Top with half the Yukon potatoes and half the cheese.
- Top with remaining onion, apple and Yukon Gold Potato. Sprinkle with the remaining sage, drizzle with the remaining oil and salt and pepper 1/4 tsp. ea. Arrange the remaining sweet potato on top and sprinkle with remaining 1/2 cup cheese.
- Cover with foil, place pan on a baking sheet and bake for 30 min. Remove the foil and bake until the vegetables are tender and the top is beginning to brown approx. 10 to 12 min more. Let cook for 5 min in the pan , then transfer to a serving platter.
